Spirit Rock Volcano Cake

This is a wonderful Vegan Chocolate cake that rivals any chocolate cake. The kitchen here at spirit rock affectionaly calls it a volcano cake, in homage to childhood baking soda & vinegar volcano experiments.

The Cake

  • 3 cups all-purpose flour
  • 2/3 cups unsweetened cocoa powder (must be sifted)
  • 2 teaspoons baking soda
  • 2 cups sugar
  • 1 teaspoon sea salt
  • 2 cups cold water
  • ½ cup + 2 tablespoons sunflower oil
  • 1 tablespoon vanilla
  • 2 tablespoons white vinegar
  • 1 cup chocolate chips

Mix together flour, cocoa, baking soda, sugar, and salt. Sift. In separate bowl, mix together water, oil, vanilla, and vinegar.

Whisk together wet and dry ingredients. Pour though strainer into bowl, breaking up lumps and pressing them through.

Mix again, adding chocolate chips. Pour into greased 9x13 inch pan or one 10-inch Bundt pan. Tap the edge of the pan against the edge of the counter to pop air bubbles. Bake at 350 for 25-30 minutes, serves 8
